Terraço Jardins Restaurant

The Terraço Jardins restaurant features a unique architecture reminiscent of a large garden, with a casual and welcoming atmosphere for meeting family and friends. The inspiration for the menu comes from constant research into Paulista culture and its various influences, especially the Caipira and Caiçara cuisines. The ingredients are native to the Atlantic Forest, valuing local producers from the State of São Paulo.

Raul Vieira - Restaurant Chef
Chef: Raul Vieira
Terraço Jardins Restaurant menu is signed by chef Raul Vieira. Graduated in Gastronomy, he already showed his passion for fishing and the beach culture from an early age. He was raised on a farm in São Lourenço da Serra, in the countryside of the state of São Paulo, bringing his countryside roots with him. He always had his father as a reference, who grew up on a coffee farm in Minas Gerais. His first contact with a professional kitchen was in Bahia, when he was an assistant at an event hosted by chef Claude Troisgros. In 2010, Raul started his story at the Renaissance São Paulo Hotel as a kitchen intern. In 2012, he went to work for a hotel chain in Abu Dhabi, for an Italian restaurant, named the best Italian restaurant in the capital that year.
Thinking about improving his career, he went to Italy in 2013 for a specialization course at the Insituto ALMA La Scuola Internazionale di Cucina Italiana in Parma and did an internship at La Madia, a restaurant by chef Pino Cuttaia, 2 Michelin stars in the region of Sicily. Always showing impeccable work, he returned to Renaissance in 2014 as the first cook, in 2015 he became chef de partie, 2019 sous-chef and now in 2022 he takes over the restaurant as chef at Terraço Jardins.

From the sea and from the countryside
Our roots Our inspiration comes from the original São Paulo cuisine: full table, family gathered, shared food and good moments. Our main influences are the country & seashore cuisines. From the sea we got the seafood, fresh fish and simple ingredients that after a meticulous preparation become dishes full of flavor, able to nurish the soul and warm the heart. From the country we brought seasonal ingredients. Freshly picked, clay pots, the slow cooking process of wood ovens, the kitchen talk and family recepies that are passed along trough generations without losing the taste of each story.
