The menu at Terraço Jardins is signed by Chef Raul Vieira. A graduate in Gastronomy from Universidade Anhembi Morumbi, Raul draws inspiration from his father, a passionate cook from Minas Gerais who, from an early age, passed on his love for fishing and the caiçara culture.
Raised on a farm in São Lourenço da Serra, in the countryside of São Paulo, Raul brings with him the caipira roots cultivated over generations. His first experience in a professional kitchen took place in Bahia, during an event with Chef Claude Troisgros.


In 2010, he began his journey at the Renaissance São Paulo Hotel as a kitchen intern. Two years later, he moved to Abu Dhabi, where he worked at Porto Bello restaurant, named the best Italian restaurant in the capital by Time Out Magazine. In 2013, he went to Italy to specialize at ALMA - La Scuola Internazionale di Cucina Italiana, in Parma, and interned at La Madia, the restaurant of Chef Pino Cuttaia, with two Michelin stars, in Sicily.


Back at the Renaissance, Raul held several positions: line cook (2014), chef de partie (2015), sous-chef (2019), and since 2022, he has been leading the kitchen at Terraço Jardins. His cuisine highlights small producers from São Paulo, native ingredients from the Atlantic Forest, and the caipira and caiçara cultures of the state.
